Ingredients
  

  • 900 g potatoes peeled and cut into chunks
  • 500 g spinach
  • 240 ml milk whole milk
  • 100 g butter
  • 1 tsp salt or to taste

Method
 

  1. Peel and wash the potatoes, then cut them into evenly sized chunks.
  2. Place the potatoes in a large pot of salted water and bring to a boil.
  3. Cook until the potatoes are fork-tender, about 20–25 minutes
  4. Drain the potatoes and mash until smooth
  5. While the potatoes cook, wash the spinach thoroughly and finely chop it
  6. Melt the butter in a skillet over medium heat
  7. Add the spinach and cook for 2–3 minutes until wilted
  8. Warm the milk in a small saucepan
  9. Add the spinach mixture, warm milk, and salt to the mashed potatoes
  10. Stir continuously over low heat until fully combined
  11. Beat or whip the mash for 1–2 minutes until light, fluffy, and creamy
  12. Serve immediately

Notes

  • Fresh spinach provides the best flavor and texture, but frozen spinach can be substituted. Thaw and drain well before using.
  • For extra creaminess, replace part of the milk with cream.
  • This recipe is adapted from a traditional Latvian cookbook and reflects the simple vegetable-forward cooking common throughout Northern Europe.
