
Crispy Duchess Potato Puffs
These Crispy Duchess Potato Puffs are light, fluffy mashed potatoes piped into elegant swirls and baked until golden brown. Made with butter, eggs, milk, and a touch of nutmeg, they're the perfect side dish for holidays, Sunday dinners, or whenever you want to elevate simple mashed potatoes.

- Peel and boil the potatoes until fork tender.
- Drain well and mash until completely smooth or press through a potato ricer.
- Return the potatoes to the warm pot.
- Gradually stir in the hot milk until smooth and fluffy.
- Add the butter and mix until melted.
- Stir in the salt, flour, and grated nutmeg.
- Beat in the eggs one at a time until fully incorporated.
- Transfer the potato mixture to a piping bag fitted with a large star tip.
- Pipe small swirls onto a lightly greased baking tray.
- Bake at 220°C (425°F) for 20–25 minutes, or until beautifully golden and crisp around the edges.
- Serve immediately while hot.
Notes
- Make sure the potatoes are well drained to prevent the mixture from becoming too soft.
