Ingredients
  

  • 750 g potatoes peeled
  • 2 eggs
  • 180 ml whole milk
  • 2 tbsp all-purpose flour
  • 30 g butter
  • 1 tsp salt
  • 1/4 tsp freshly grated nutmeg
  • Butter or oil for greasing the baking tray

Method
 

  1. Peel and boil the potatoes until fork tender.
  2. Drain well and mash until completely smooth or press through a potato ricer.
  3. Return the potatoes to the warm pot.
  4. Gradually stir in the hot milk until smooth and fluffy.
  5. Add the butter and mix until melted.
  6. Stir in the salt, flour, and grated nutmeg.
  7. Beat in the eggs one at a time until fully incorporated.
  8. Transfer the potato mixture to a piping bag fitted with a large star tip.
  9. Pipe small swirls onto a lightly greased baking tray.
  10. Bake at 220°C (425°F) for 20–25 minutes, or until beautifully golden and crisp around the edges.
  11. Serve immediately while hot.

Notes

  • Make sure the potatoes are well drained to prevent the mixture from becoming too soft.
  • Freshly grated nutmeg gives these potato puffs their classic European flavor.
  • Delicious served with roasted meats, chicken, fish, or a rich mushroom sauce.
