Fresh Spinach Salad with Eggs

Ingredients
  

  • 250 g fresh spinach
  • 3 hard-boiled eggs
  • 2 tbsp fresh lemon juice
  • 4 tbsp olive oil
  • 1 small onion finely chopped
  • 1/4 tsp grated nutmeg
  • 1 tsp sugar
  • Salt, to taste

Method
 

  1. Wash the spinach thoroughly, remove any tough stems, and pat dry.
  2. Slice or roughly chop the spinach and place it in a large bowl.
  3. In a small bowl, whisk together the lemon juice, olive oil, salt, sugar, and grated nutmeg.
  4. Stir the finely chopped onion into the dressing.
  5. Pour the dressing over the spinach and toss well to coat.
  6. Let the salad rest for about 1 hour so the spinach can absorb the flavors.
  7. Quarter the hard-boiled eggs and arrange them on top of the salad just before serving.

Notes

  • Baby spinach works beautifully in this recipe.
  • Letting the salad rest is traditional and softens the spinach slightly.
  • Serve with rye bread or alongside grilled meats or fish.
