
Fresh Spinach Salad with Eggs

- Wash the spinach thoroughly, remove any tough stems, and pat dry.
- Slice or roughly chop the spinach and place it in a large bowl.
- In a small bowl, whisk together the lemon juice, olive oil, salt, sugar, and grated nutmeg.
- Stir the finely chopped onion into the dressing.
- Pour the dressing over the spinach and toss well to coat.
- Let the salad rest for about 1 hour so the spinach can absorb the flavors.
- Quarter the hard-boiled eggs and arrange them on top of the salad just before serving.
Notes
- Baby spinach works beautifully in this recipe.
- Letting the salad rest is traditional and softens the spinach slightly.
- Serve with rye bread or alongside grilled meats or fish.
