These simple Carrot Fritters are an old-fashioned European recipe made with grated carrots, eggs, milk, and flour. Lightly savory with just a touch of sweetness, they make an easy breakfast, lunch, or side dish.

Ingredients
  

  • 110 g finely grated carrots (about 1 cup)
  • 60 ml milk (4 tbsp)
  • 24 g all-purpose flour (3 tbsp)
  • 1-2 g salt, to taste
  • 5-10 g sugar, to taste
  • 20-30 g butter or neutral oil, for frying

Method
 

  1. Peel and finely grate the carrots.
  2. Add the eggs, milk, flour, salt, and sugar.
  3. Mix until evenly combined.
  4. Heat a little butter or oil in a frying pan over medium heat.
  5. Spoon the carrot mixture into the hot pan using a tablespoon.
  6. Flatten slightly into small fritters.
  7. Fry until golden brown on the first side, then turn and cook the second side until golden and cooked through.
  8. Serve warm

Notes

Grate the carrots finely: This helps them soften during the relatively short frying time.
Sugar: The vintage recipe simply says cukurs without specifying an amount, so 1 teaspoon is a suggested starting point. You can omit it for completely savory pancakes.
Serving ideas: Serve with sour cream for a savory version, or a little yogurt or applesauce if you prefer them slightly sweeter.
Important: The cookbook calls for fat for frying but doesn't specify the type. Butter or a neutral cooking oil works well.
