Ingredients
  

  • 250 g cooked crab meat (or imitation crab)
  • 2 pickled cucumbers, diced
  • 1 small onion, finely chopped
  • 150 g green peas
  • 2 hard-boiled eggs
  • 200 g mayonnaise
  • 1 tbsp fresh lemon juice
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley or dill, chopped
  • Cooked carrots, finely diced (optional, for garnish)

Method
 

  1. Dice the crab meat into bite-sized pieces and drizzle with the lemon juice.
  2. Dice the pickled cucumbers.
  3. Finely chop the onion.
  4. Dice the hard-boiled eggs.
  5. In a large bowl, combine the crab, pickles, onion, green peas, and eggs.
  6. Add the mayonnaise and gently fold everything together until evenly coated.
  7. Season with salt and black pepper to taste.
  8. Transfer to a serving bowl and garnish with chopped herbs and diced cooked carrots, if desired.
  9. Chill for at least 30 minutes before serving.

Notes

  • Imitation crab sticks work perfectly if fresh crab isn't available.
  • This salad tastes even better after chilling for a few hours.
  • Serve with rye bread, crackers, or as part of a holiday buffet.
