Ingredients
  

  • 400 g dry cottage cheese
  • 500 ml whole milk
  • 1 packet vanilla pudding mix (or vanilla custard powder)
  • 1 tbsp unsalted butter
  • 2 eggs separated
  • 50 g sugar (to taste)
  • 50 g dark chocolate

Method
 

  1. Prepare the vanilla pudding according to the package instructions using the milk and butter.
  2. Remove the pudding from the heat and allow it to cool slightly.
  3. Stir in the egg yolks one at a time.
  4. Add the cottage cheese and sugar, mixing until smooth.
  5. Beat the egg whites until stiff peaks form.
  6. Gently fold the whipped egg whites into the cottage cheese mixture.
  7. Divide the dessert into serving glasses or bowls.
  8. Sprinkle generously with grated chocolate.
  9. Chill for at least 2 hours before serving.

Notes

  • Traditional Latvian recipes use dry cottage cheese (farmer's cheese), which is firmer and less creamy than American-style cottage cheese.
  • If dry cottage cheese isn't available, ricotta or well-drained cottage cheese can be used instead.
  • For extra flavor, garnish with fresh berries or a few mint leaves.
