Hearty Spiced Beef and Potato Soup

This hearty beef and potato soup is a comforting European recipe made with tender beef, potatoes, onions, garlic, paprika, caraway seeds, tomato paste, and a splash of red wine. Inspired by a traditional Latvian cookbook, it's rich, flavorful, and perfect for chilly evenings.

Ingredients
  

  • 1,5 litres beef broth
  • 200 g lean beef cut into bite-sized pieces
  • 4 medium potatoes peeled and diced
  • 2 onions finely chopped
  • 2 garlic cloves minced
  • 2 tbsp butter
  • 2 tbsp tomato paste
  • 1 tsp caraway seeds
  • 1 tsp sweet paprika
  • 1 bay leaf
  • 1 tsp grated lemon or orange zest
  • 60 ml red wine
  • Salt and black pepper, to taste
  • Fresh parsley or dill, chopped
  • sour cream for serving

Method
 

  1. Melt the butter in a large pot over medium heat.
  2. Add the beef and brown it on all sides.
  3. Stir in the chopped onions and cook until softened.
  4. Pour in the beef broth and add the bay leaf.
  5. Simmer for about 30 minutes.
  6. Add the diced potatoes, caraway seeds, paprika, and citrus zest.
  7. Continue cooking until the beef and potatoes are tender.
  8. Stir in the tomato paste, minced garlic, and red wine.
  9. Simmer for another 10 minutes.
  10. Season with salt and freshly ground black pepper.
  11. Serve hot with a spoonful of sour cream and sprinkle with fresh parsley or dill.

Notes

  • The original recipe uses either lemon or orange zest, giving the soup a subtle fresh aroma.
  • A splash of red wine adds richness but can be omitted if preferred.
  • This soup tastes even better the next day.
